Shepherd's Pie!

feijao  Tropeiro, white rice

Feijão Tropeiro

Beans, Sausage, Yolka flour, bacon, eggs, onions, pepper, garlic

Lasagna!

 

Approx 48 oz spaghetti sauce – homemade is better but jarred is ok, the thicker the better

1 box lasagna noodles, (9 noodles needed) I prefer the curly kind

32 ounce container ricotta cheese

2 cups of shredded cheese, I use mozzarella & Italian blend

1 egg, slightly beaten– optional

Grated parmesan cheese

Basil

Oregano

Pepper

Parsley

 

 

Cook the lasagna noodles according to package directions, then rinse with cold water so you can handle them & they don’t stick together. 

Spaghetti sauce should be at least room temperature.  Combine the egg and ¼ cup parmesan cheese with the ricotta.  Add some basil, oregano, pepper, and parsley and mix together.  Preheat oven to 375F.  Assemble the lasagna in a 9 x 13 inch baking dish.  Start by drizzling some sauce in the bottom of the dish.  Then put on a layer of noodles, sprinkle with some of the shredded cheese, and spread on a layer of ricotta.  Make another layer of noodles, sauce, shredded cheese, and ricotta.  Finish with another layer of noodles, sauce, shredded cheese, & parmesan cheese.  Bake for approx 30 minutes, or until it’s hot & bubbly.

 

Serve with fresh salad & garlic bread.  Enjoy!!
